Stuffed Filet Of Sole

2 tbsp. butter
1/2 lb. shrimp, chopped
Mushrooms, chopped
1 lg. onion, chopped
2 tbsp. parsley, chopped
1/4 c. water
1/3 c. sherry
1/2 c. cheese
8 filets, about 3 lbs.
1/2 tbsp. salt, pepper, paprika
2 (10 oz.) cans mushroom soup
1/2 pt. sour cream

Saute shrimp, mushrooms, onions, parsley until onion is soft. Sprinkle filets with salt, pepper, paprika. Spoon on onion mix. Roll filets and fasten with a toothpick. In a medium bowl combine soup, water, sherry, sour cream. Pour over filets. Sprinkle with cheese. Bake 30 minutes at 400 until filets flake.
