Stuffed Flounder

1 cup chopped onion
1 cup chopped bell pepper
1 cup chopped celery
1/2 cup sour cream
1/4 cup margarine
8 oz. package herbal bread crumbs
6 oz. can small or broken Shrimp
6 oz. can Crab Meat
1 Flounder (approximately 2 lbs. live weight)
1 lemon


Fillet, wash and set aside the Flounder. In a large bowl mix onion, bell pepper, celery, bread crumbs, Shrimp and Crab Meat. In a shallow pan lay the bottom fillet (white side) skin side down. Form the stuffing mixture on the fillet followed by top fillet (dark side). Slice the lemon in 3/16 inch slices and place on top of the Flounder. Chop margarine on top of the Flounder. Cover and bake at 375 degrees F for 45 minutes. Remove cover and cook an additional 15 minutes.
