Hearty Fish Chowder

1 lb. frozen cod or haddock, partially thawed & cubed
1 lg. onion, chopped
4 tbsp. butter
2 c. water
2 tsp. salt
1/2 tsp. basil
1/4 tsp. pepper
1 can corn
1 can evaporated milk
3 lg. potatoes, cubed


In large kettle, saute onion in butter until soft. Add potatoes, spices and water. Cover and simmer 15-20 minutes until potatoes are tender. Place fish on top (don't stir). Simmer 15-20 minutes more. Add evaporated milk and top with fresh parsley if you have some. Heat through, but do not boil after adding milk. *Tastes great reheated, but take care not to boil it. Serves 6-8.
