Hearty Fish Chowder

1/4 cup butter or margarine
6 Tbsp. flour
1 envelope Lipton country vegetable soup dry mix
2 cups milk
1 lb. thawed Sole or Flounder
1 lb. Shrimp or Crab
1 cup shredded sharp Cheddar cheese
Salt, pepper, and garlic to taste


Cook first 5 ingredients in large saucepan until thick, stirring constantly. Add fish and cheese and let simmer until cooked. Sprinkle with parsley before serving.


Makes 6-8 small servings. Easy to double the recipe.


OPTIONAL: Add peas or mixed vegetables to chowder for "color."
