Flounder Delight

1 1/2 lbs. Flounder Fillets (thawed if frozen)
1 Tbsp. lemon juice
2 Tbsp. water
1 small tomato, sliced thin
3 small potatoes, sliced thin
1 onion sliced in thin rings
1/8 tsp. pepper
1/2 tsp. salt
1/2 tsp. onion salt or powder
1/2 tsp. garlic salt or powder


Topping:
2 Tbsp. seasoned bread crumbs
2 Tbsp. mayonnaise
Paprika


Divide Fillets into eight portions. Drain, pat dry and place on paper towels to absorb excess water. Sprinkle with lemon juice. Put 2 Tbsp. water in the bottom of a 13x9x2 inch pan. Arrange tomato, potatoes and onion alternately on the bottom of the pan and sprinkle with seasonings. Bake for 20 minutes.


Go ahead and mix the Topping ingredients in a small bowl and set aside. When the vegetables have baked for 20 minutes remove pan from oven. Arrange fish Fillets on top of the vegetables and spread the Topping over the fish. Sprinkle with paprika and bake for 10 to 15 minutes or until fish is flaky.
