Baked Stuffed Flounder

6 Flounder Fillets
Seafood dressing
Salt & pepper
3 Tbsp. lemon juice
1 cup bread crumbs
1/4 lb. melted butter


Preheat oven to 375 degrees F . Grease a shallow baking dish. Stuff each fillet with 4 to 6 tablespoons dressing. Roll and fasten with toothpicks. Place in prepared pan and season with salt and pepper. Sprinkle with lemon juice, then bread crumbs. Pour melted butter over fish; set in oven. Bake at 375 degrees F for 25 minutes.


Seafood Dressing:
6 Tbsp. butter
1/4 cup celery, finely chopped
1/2 cup onion, finely chopped
1/4 cup green pepper, finely chopped
1/2 lb. Shrimp, cooked & diced
1 tsp. chopped parsley
1 tsp. chopped pimento
1/2 tsp. paprika
1 tsp. Worcestershire sauce
1/2 tsp. seafood seasoning
Salt & pepper
1/4 cup dry sherry
1 1/2 cups bread crumbs


Melt butter, add vegetables and saute until tender. Add remaining ingredients except bread crumbs and cook over low heat for 10 minutes. Add bread crumbs and mix well.
