Grilled Catfish

Catfish fillets
Olive oil
Freshly squeezed lemon juice
Salt & freshly ground black pepper to taste

Now that catfish has become an "in" food, you will find it in the most elegant grill houses. This recipe contains nothing fancy, but putting the fish on a charcoal grill is just wonderful. Easy and quick, and very flavorful.

Mix a bit of olive oil, lemon juice, salt and pepper together and whip to the consistency of a salad dressing. Marinate the fish in this mixture for 1/2 hour before grilling. Grill over charcoal for about 5 minutes on a side, or until the fish is lightly browned and begins to flake a bit. Do not overcook.
