Fillet Of Flounder Divan

1/4 cup margarine
1 cup onion, finely chopped
1/4 cup unsifted all purpose flour
1/2 tsp. salt
1/2 cup hot sauce
Dash pepper
Dash nutmeg
2 cups milk
1 egg yolk
1/2 cup grated Swiss cheese

To make sauce: in hot margarine, melted in medium size heavy saucepan, saute onions, stirring, until golden, about 5 minutes. Remove from heat. Add flour, 1/2 teaspoon salt, dash pepper and the nutmeg; stir until smooth. Gradually add milk, stirring after each addition. Return to heat. Over medium heat, bring to boiling, stirring constantly; reduce heat, and simmer 3 minutes, stirring. In small bowl, beat egg yolk with fork; stir in about 1/2 cup hot sauce; mix well. Return egg yolk mixture along with 1/2 cup cheese, to rest of sauce in saucepan, stirring constantly. Cook over low heat, stirring until thickened and cheese is melted; do not boil.
