Halibut Florentine

1 (10 oz.) package frozen chopped spinach
2 Tbsp. lemon juice
4 (1/2 lb.) Halibut Fillets
1 Tbsp. reduce calorie margarine
2 Tbsp. all-purpose flour
1 cup skim milk
1 egg yolk, beaten
1/4 cup (1 oz.) shredded lowfat Swiss cheese
1 Tbsp. grated Parmesan cheese

Cook spinach according to directions, omitting salt. Drain well and place in 8x12x2 inch casserole dish; sprinkle with lemon juice. Rinse Fillets thoroughly in cold water. Pat dry with paper towels, and arrange on spinach. Melt margarine in small saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly until thickened and bubbly.

Remove from heat and stir in egg yolk. Add shredded Swiss cheese. Cook over low heat, stirring frequently until cheese melts. Spoon sauce over fish and sprinkle with Parmesan cheese. Bake at 350 degrees F for 20 minutes or until fish flakes easily when tested with fork.
