Fish Chowder

1 lg. onion, chopped
1/2 c. butter or margarine
4 c. water
6 c. peeled potatoes, diced
2 lbs. fresh or frozen Cod fillets, cut into chunks
3 tbsp. lemon juice
2 c. milk
2 (12 oz.) cans evaporated milk
2 1/2 tsp. salt
2 tsp. pepper
Fresh parsley, chopped (for garnish)

In a large pan saute onion in butter, add water and bring to a boil. Add potatoes and cook 10 minutes. Add fish and lemon juice. Reduce heat and simmer 10 minutes. Add milk and evaporated milk and salt and pepper. Garnish with parsley and serve hot. Makes 4 quarts.
