Fish Chowder

1/4 c. diced salt pork
3/4 c. sliced onion
2 c. hot water
2 c. sliced potatoes
2 (3 lb.) cod or haddock, cut in chunks
2 1/2 tsp. salt
Dash of pepper
1 c. evaporated milk
3 c. fresh milk

Fry salt pork in a heavy kettle until crisp and delicately browned. Add onions and saute until light brown. Add water and potatoes. Cook 5 minutes. Add fish and cook an additional 15 minutes or until fish flakes easily with fork. Add pepper and milk. Repeat. Yield: Serves 6.
