Fish Chowder

2 lbs. fish fillets
2 onions, chopped fine
1 pt. evaporated milk
1/4 lb. salt pork, diced
5 sm. raw potatoes, diced
1 tbsp. butter
Salt & pepper to taste

Cut the fish into 1/2 inch cubes. Fry the salt pork in a Dutch skillet. When crisp, remove pork and brown the onions in the fat. Add the fish and potatoes and cover with hot water. Simmer until potatoes are tender. Pour in milk and 2 cups hot water. Cook for 5 minutes, then add the butter. Sprinkle croutons and serve immediately.
