Squid Spaghetti

200 g Squid; cleaned
1 Good olive oil
1/2 Clove garlic; chopped
1/2 sm Red chilli; seeded and chopped
1 Paring of lemon rind; no pith, finely chopped
1 tb Chives; chopped
1 tb Parsley; chopped

Bring a pan of well salted water to the boil.

Slice the squid as finely as possible and blanch for a matter of seconds, use a sieve to lower it into the water.

Toss in a bowl with everything else, check seasoning and serve.
