Cayenne Spiced Fried Squid
1 lb Squid; cleaned and sliced
2 Egg whites
3/4 c All-purpose flour
1 tb Cayenne pepper; or more to taste
Oil; for deep frying
Salt; to taste
Lime wedges; for garnish
Heat 4 inches of neutral-flavored oil in large heavy pot to 360 degrees. In a medium bowl, combine squid pieces and egg white, mixing gently but Working in batches, drop a handful of squid into seasoned flour and toss This recipe yields 4 appetizer servings.
