Baked Stuffed Trout
4 Rainbow trout
2 c Fresh whole wheat bread crumbs
1 Orange, peeled, cut into segments and chopped
1 Grapefruit, peeled, cut into segments and chopped
2 tb Chopped fresh parsley
1 Celery stalk, sliced
1 Garlic clove, crushed
1 Egg, beaten
Preheat the oven to 400 degrees F. Clean and gut the fish. Remove the fins.
Mix together the bread crumbs, orange, grapefruit, parsley, celery and garlic. Stir in the egg, and mix together. Place the stuffing mixture inside the prepared fish. Wrap the fish in buttered foil, and bake for 25 mintues. Serve with salad.
